I put on another 2.5 pounds this week (sigh).  The one good thing about that is that it's finally snapped me out of the downward spiral I was on and I'm really feeling like I can get back on track this week.  Wish me luck! :)
 
2 1/2 pounds on this week.  Not great but not completely unexpected as I've resolved to stop smoking which has contributed to a lot of synful nibbling!  Will try to do better next week.  Really, I will! :)
 
OK, Christmas is over (practically 3 weeks of being off-plan for me) so it's time to put all that behind me and make a new start from this point on.

Of course, tonight was my first weigh-in since Christmas too, and on my way there I was thinking about the previous 3 weeks, confident that I was going to have a significant gain when I stepped on the scales.

Imagine my surprise to find that I'd lost 1/2lb! Mind you, I did have the tummy bug that was going around over New Year, so I'm sure that contributed a little but still, 3 weeks of chocolates, pastries, etc etc is a lot to make up for so I'm chuffed that I've gotten off so lightly!  A friend said to me "this means you can eat whatever you want and still lose weight", which I know from past experience is absolutely NOT true.  The best way for me to continue my weight-loss journey is to get back on the Slimming World plan and STICK TO IT! :)

I have completely lost the plot and fallen off the wagon. Am pretty down about it, am leaving it now til after christmas and hope to regroup then!

Serves 2 (or 1 very hungry person!)
Syn-free

Ingredients

2 slices lean ham, diced
8 cherry tomatoes, quartered
6 mushrooms, sliced
Small onion, chopped
1/2 red or green pepper, thinly sliced
(I used frozen onions and peppers)
10 passata cubes
Fry Light, pinch celery salt, pinch oregano, pinch garlic granules
(or a clove of chopped garlic)

1 chicken oxo cube, crumbled

Method
  1. Spray frying pan on medium/high heat with Fry Light
  2. Add onions, peppers, tomatoes and mushrooms and fry until soft and golden (along with the garlic if you're using fresh)
  3. Add passata cubes and stir while they melt
  4. Add the remaining ingredients and stir fry until the ham is heated through and the sauce has reduced a little.
  5. Stir into cooked pasta.
