2 slices lean ham, diced
8 cherry tomatoes, quartered
6 mushrooms, sliced
Small onion, chopped
1/2 red or green pepper, thinly sliced
(I used frozen onions and peppers)
10 passata cubes
Fry Light, pinch celery salt, pinch oregano, pinch garlic granules
(or a clove of chopped garlic)
1 chicken oxo cube, crumbled

Method
- Spray frying pan on medium/high heat with Fry Light
- Add onions, peppers, tomatoes and mushrooms and fry until soft and golden (along with the garlic if you're using fresh)
- Add passata cubes and stir while they melt
- Add the remaining ingredients and stir fry until the ham is heated through and the sauce has reduced a little.
- Stir into cooked pasta.
